Fruit Salad with Cinnamon and Coconut Whipped Cream


2 medium oranges, peeled and diced

2 medium apples, diced

1 cup pecans or walnuts, chopped

1 teaspoon cinnamon

Coconut Whipped Cream (optional)


Place the fruit into bowls. Sprinkle with chopped nuts and cinnamon. Top with coconut whipped cream, if desired.

Coconut Whipped Cream Ingredients:

1 can full-fat coconut milk

1/8 teaspoon vanilla (optional)

1/8 teaspoon cinnamon or freshly grated nutmeg (optional)


Refrigerate the can of coconut milk for at least 2 hours.

Open the can and scoop out thickened coconut cream on top into a medium bowl. Drink the coconut water at the bottom or save it for a smoothie.

Add cinnamon and vanilla if desired, and whip coconut cream with a wire whisk until it begins to thicken.

Add on top of your fruit salad.
