3 Tbsp Raisins
1 cup walnuts, chopped
¼ cup honey or maple syrup
½ teaspoon vanilla extract
2 teaspoons cinnamon
1/8 teaspoon nutmeg
Coconut whipped cream, optional
- Preheat oven to 350° F.
- Cut the apples into two pieces, and scoop out the seeds. Place cut side up in an oblong baking dish.
- Mix the melted coconut oil, honey/maple syrup, cinnamon, nutmeg, and vanilla in a small bowl. Add the walnuts and raisins to the mix.
- Sprinkle the filling evenly over the apples.
- Cover baking dish with foil and bake apples until soft, approximately 40 minutes. Serve with coconut whipped cream, and enjoy!
